What you'll do

  • You begin by reviewing the day’s operations, occupancy, reservations, events, production needs and culinary priorities with the Executive Chef and senior kitchen team.
  • You coordinate the daily operation of the hotel’s kitchens, ensuring effective communication, staffing and workflow across different outlets and production areas.
  • You supervise and support Sous Chefs, Head Chefs of the à la carte restaurants, Chefs de Partie and the wider Culinary team, ensuring that each kitchen section is fully prepared and operates smoothly throughout service.
  • You monitor food preparation, cooking and presentation to ensure consistently high standards of quality, taste and presentation.
  • You work closely with the Executive Chef on menu development, seasonal concepts, recipes and new culinary initiatives.
  • You support the standardisation of recipes, presentation guidelines and production methods across the Culinary operation.
  • You coach, mentor and develop kitchen team members, helping them strengthen their skills and progress within the team.
  • You contribute to workforce planning, shift organisation and the effective allocation of kitchen resources according to operational needs.
  • You monitor food usage, stock levels, portioning and waste, supporting effective food-cost and inventory management.
  • You collaborate with Purchasing, Stores and other departments to help ensure the quality and availability of ingredients and supplies.
  • You ensure full compliance with HACCP, food safety, hygiene, health and safety procedures, as well as Mar-Bella Collection’s internal standards.
  • You monitor kitchen equipment and facilities, identifying maintenance needs and ensuring timely follow-up.

For Season 2027, we are looking for an experienced Executive Sous Chef to join the Culinary team at MarBella in Corfu, leading with expertise, creativity and a strong commitment to people and quality.

The Role

Reporting directly to the Executive Chef, and as Executive Sous Chef, you will lead the day-to-day culinary operation of MarBella, ensuring consistency, quality and operational excellence across the hotel's kitchens and Food & Beverage outlets.

You will play a key role in bringing the Executive Chef's culinary direction to life, supporting menu development, coordinating kitchen teams, maintaining high food quality and safety standards, and developing the people who shape every dining experience.

As a senior member of the Culinary leadership team, you will also step into the Executive Chef's responsibilities when required, helping ensure that the overall kitchen operation runs smoothly, efficiently and to the highest standards.
