Reporting to the Director of Food & Beverage, the Assistant Food & Beverage Manager — TC's/Gaming leads the full operational and commercial performance of TC's. You will be accountable for bar and gaming revenue, promotional strategy, regulatory compliance and the development of a high-performing team, while supporting the broader hotel Food & Beverage operations.
- Deliver budgeted revenue, GOP and productivity targets across gaming and bar operations
- Grow market share and local patronage through a venue-specific marketing and operational plan
- Lead service standards that build loyalty, repeat visitation and venue reputation, and lead by example in guest interaction and service recovery
- Plan and execute gaming promotions that drive revenue while maintaining responsible gaming standards
- Manage relationships with Licensed Monitoring Operators and external gaming partners
- Maintain operational excellence across gaming machines, floats, surveillance and compliance documentation
- Oversee daily bar operations and coordinate functions within TC's to maximise profitability
- Work with the Executive Chef and F&B leadership on menus, standards and venue activations
- Ensure full compliance with Queensland liquor and gaming legislation, OLGR requirements and RSA/RSG obligations
- Uphold the Responsible Gambling Code of Practice and manage problem gambling matters sensitively
- Maintain strict cash handling, key control and surveillance standards
- Lead, coach and develop the TC's team, and act as escalation point and mentor for Supervisors
- Manage recruitment, onboarding, training, compliance certification and succession planning
Qualifications
What you will bring to the role:
- Proven leadership experience in a licensed bar and gaming venue, or a high-volume Food & Beverage outlet
- Current RSA and RSG certification, and RMLV (or the ability to obtain prior to commencement)
- Working knowledge of Queensland liquor and gaming legislation and OLGR requirements
- Commercial acumen — you can own a P&L, roster to budget and explain a variance
- Experience planning and executing gaming promotions within regulatory requirements
- Confidence managing problem gambling matters sensitively and in line with the Responsible Gambling Code of Practice
- A track record of leading, coaching and developing teams, including performance management and succession planning
- Strong systems literacy across POS administration, stocktakes, reporting and audit documentation
- High emotional intelligence, self-awareness and interpersonal skills, with the ability to stay organised across competing priorities
- Availability across a rotating roster including nights, weekends and public holidays
