Sous Chef | Good Nature Hotel

Good Nature Hotel has recently undergone a renovation and we’re looking for an experienced and motivated Sous Chef to join our kitchen leadership team.

This is a hands-on role for someone who can confidently support the Head Chef, lead the kitchen team and maintain high standards across every service.

You’ll be organised and proactive during prep, while having the ability to go from 0 to 100 when service kicks off. You’ll remain calm under pressure, communicate clearly and help set the pace for the team during busy, high-volume services.

What you’ll be doing:

• Support the Head Chef with the day-to-day operation of the kitchen
• Lead, motivate and develop the kitchen team
• Run service and maintain consistency, speed and presentation
• Assist with stocktakes, ordering, stock rotation and wastage control
• Support rostering, kitchen administration and cost management
• Maintain strong food safety, hygiene and cleaning standards
• Ensure food is prepared, stored and served in line with food safety requirements
• Assist with training, performance management and team communication
• Step into the Head Chef’s responsibilities when required

What we’re looking for:

• Previous experience as a Sous Chef or senior kitchen leader
• A strong, confident and supportive leadership style
• Experience in a fast-paced, high-volume kitchen
• Someone who can anticipate what needs to be done and take ownership
• Strong understanding of food safety, allergen management and kitchen compliance
• Experience with stock control, stocktakes and kitchen administration
• Calm, reliable and solutions-focused under pressure
• Flexible availability across nights and weekends
